Ingredients for 4 servings:
- 500 g poultry liver(s)
- 2 tbsp olive oil
- 1 onion(s), chopped
- 2 apples
- some lemon juice
- 4 eggs, hard boiled
- 1 tsp curry powder
- 2 tsp sherry (alternatively white wine)
- salt and pepper
Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
Brown the chicken liver in hot olive oil in a pan, then remove it from the pan. Sauté the chopped onion in the pan drippings. Deglaze with sherry or white wine. Peel the apples, remove the cores, and dice them. Add them to the onion with a little lemon juice and sauté until soft. Peel and dice the hard-boiled eggs, then add them to the apples along with the liver. Mix everything well and heat through. Finally, season with curry powder, salt, and pepper. Serve with rice.
