Chicken – Mango – Canapes
The perfect chicken – mango – canapes recipe with a picture and simple step-by-step instructions.
- 400 g Chicken breast fillet
- 2 Chopped garlic
- 4 cm Grated ginger
- 12 tbsp Sweet and hot chili sauce
- Salt pepper
- 0,5 bunch Mint or lemon balm
- 2 maturity Mango
- 2 tbsp Oil
- Cut the chicken breast fillet into approx. 2 x 2 cm cubes.
- Mix the garlic cloves and ginger with half of the chili sauce.
- Season with salt and pepper.
- Pour the marinade over the meat and cover everything and let it steep (ideally overnight)
- Wash mint, dry, pluck from the stems. Set aside 12 leaves, finely chop the rest.
- Peel the mangoes and cut them from the stone.
- Dice half of the pulp.
- Mix the rest of the chilli sauce with the mango, the mango cubes and the chopped mint leaves and season with salt and pepper.
- Heat the oil, fry the chicken over a mild heat.
- Drain on paper towels.
- Spread the salsa on serving spoons, place chicken pieces on top and garnish with mint leaves.
