For the fruit layer, heat the amla fruits and blueberries in a saucepan together with the brown sugar and the pulp of a scraped out ½ vanilla pod and let it boil down a little until a syrupy mixture is formed. Refrigerate.
For the ice cream, let the sugar dissolve in a saucepan. As soon as it is liquid, add the lime juice and coconut milk.
Halve the vanilla pod and scrape it out. Add everything including the pod to the liquid and simmer for 15 minutes. Let the mixture cool down a little.
Now add the chia seeds to the liquid and place in the ice cream maker for 40 minutes or in the freezer for at least 3 hours. When preparing food in the freezer, stir or whip again and again so that fewer ice crystals form.
Then spread half of the ice cream mixture into a loaf pan, fill in the fruit layer and pour the rest of the ice cream over it. Put the whole thing in the freezer for about 1 hour. Take out to thaw about 10 minutes before serving and cut into slices.
