Ingredients
 

Mango Lassi Supreme:

  • 2 tbsp Chia seeds
  • 2 tsp Honey
  • 0,5 tsp Vanilla pod
  • 0,5 Pc. Lime
  • 50 g Sugar
  • 200 g Blueberries
  • 100 g Amla fruits
  • 50 g Brown sugar
  • 0,5 Pc. Vanilla pod
  • 2 Pc. Mangoes
  • 500 g Yogurt
  • 500 ml Cold water
  • 0,5 tsp Rose water
  • 6 tbsp Brown sugar
  • 0,5 tsp Cardamom
  • 0,5 tsp Cinnamon
  • Coconut flakes
  • Pistachio nuts

Instructions
 

  • For the fruit layer, heat the amla fruits and blueberries in a saucepan together with the brown sugar and the pulp of a scraped out ½ vanilla pod and let it boil down a little until a syrupy mixture is formed. Refrigerate.
  • For the ice cream, let the sugar dissolve in a saucepan. As soon as it is liquid, add the lime juice and coconut milk.
  • Halve the vanilla pod and scrape it out. Add everything including the pod to the liquid and simmer for 15 minutes. Let the mixture cool down a little.
  • Now add the chia seeds to the liquid and place in the ice cream maker for 40 minutes or in the freezer for at least 3 hours. When preparing food in the freezer, stir or whip again and again so that fewer ice crystals form.
  • Then spread half of the ice cream mixture into a loaf pan, fill in the fruit layer and pour the rest of the ice cream over it. Put the whole thing in the freezer for about 1 hour. Take out to thaw about 10 minutes before serving and cut into slices.

Mango Lassi Supreme:

  • Peel the mango, cut the pulp from the core and whisk in a blender with all the ingredients on medium speed. Fill into glasses and garnish with coconut flakes or pistachio nuts and enjoy.
