Ingredients for 2 servings:

  • 320 g chicken breast fillet(s) (or ready-made minced poultry)
  • 1 chili pepper(s)
  • 1 egg(s)
  • 2 tbsp breadcrumbs
  • 2 garlic cloves
  • 1 onion(s)
  • 1 carrot(s)
  • 1 piece(s) ginger root, fresh
  • 1 tbsp olive oil
  • salt and pepper
  • Paprika powder

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Mince the chicken in a meat grinder (or use ready-made mince) and place it in a bowl. Dice the chili pepper and add it to the mince. Mix in the egg and breadcrumbs. Peel and finely chop the onion, garlic cloves, and carrot. Peel and finely grate the ginger root. Heat 1 teaspoon of oil in a pan, add the onion, garlic, carrot, and ginger, and sweat until translucent. Add the onion mixture to the mince and stir in. Season generously with the spices, adding more spices to taste. Shape the mixture into portions of meatballs. Heat the remaining oil in a pan and fry the chicken meatballs. The chicken meatballs can also be eaten with tomato sauce as a low-carb, protein-rich recipe.
