Chicken noodle soup

Ingredients for 6 servings:

  • 1 medium-sized soup chicken, 1-2 kg, ready to cook
  • 2 onions
  • 2 bunch soup vegetables
  • 100 g pasta, e.g. small shell pasta
  • salt and pepper
  • oil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Place the chicken in a large pot and add 2 liters of water, cover, and simmer for 1.5 hours. Remove the chicken from the broth and remove the meat from the bones, possibly cutting it into smaller pieces. Chop the onions and vegetables. Heat a little oil in another large pot and sauté the onions until translucent. Add the other vegetables, except for the parsley, and pour in the chicken broth. Cook for 20 minutes. Stir in the soup noodles during the last 10 minutes. Finally, stir in the beef and finely chopped parsley. Season well with salt and pepper.
