Chicken salad with fruit

Ingredients for 4 servings:

  • 1 chicken, grilled
  • 500 g honeydew melon(s)
  • 3 kiwis
  • 300 g mushrooms, small
  • 4 tbsp mayonnaise
  • 150 g low-fat yogurt
  • 1 tbsp cognac or brandy
  • 2 tbsp orange juice
  • Salt
  • Lemon pepper
  • 1 radicchio

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Skin the chicken, remove the meat from the bones, and chop finely. Halve the melon, remove the seeds, and scoop out the flesh into balls or cubes. Peel the kiwis, halve lengthwise, and slice. Clean the mushrooms and halve them if desired. Mix the mayonnaise, yogurt, cognac, and orange juice together and season with salt and lemon pepper. Stir into the salad ingredients. Remove the radicchio leaves from the head, wash them, line a bowl, and arrange the salad on top.
