Ingredients for 4 servings:

  • 2 chicken legs
  • 1 bunch of celery
  • 1 stalk(s) leek
  • 4 carrots
  • 1 parsnip(s)
  • 2 tomatoes
  • 1 shallot(s)
  • 1 piece(s) ginger
  • salt and pepper
  • coriander
  • curry

Working time approx. 15 minutes; Cooking/baking time approx. 2 hours 30 minutes; Total time approx. 2 hours 45 minutes

The best medicine in the world

Place a large, deep pot on the stove. Rinse the chicken thighs and place them in the pot. Clean the celery, leek, carrots, and parsnips and chop them into large pieces. Add them to the pot along with the tomatoes, shallot, and ginger. Add enough water to cover all ingredients. Season with salt, pepper, coriander, and curry powder and bring to a boil. Simmer for 2 to 2.5 hours, keeping an eye on the soup. The longer you cook it, the more intense the flavor will be.
