Chicken strips with carrots

Ingredients for 2 servings:

  • 2 onions
  • 2 carrots, large
  • 2 small oranges
  • 1 tbsp oil
  • 2 chicken breast fillets
  • 2 tbsp crème fraîche
  • 1 tbsp mustard, Dijon with honey
  • Salt
  • Pepper, white
  • 1 box of cress

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Quarter and peel the onions. Peel and dice the carrots. Juice the oranges. Sauté the onions and carrots in the oil for about three minutes. Add the orange juice and bring to a boil. Cover and simmer for about three minutes. Meanwhile, cut the chicken fillet into thin strips. Add to the vegetables, cover, and let simmer for five minutes. Mix the crème fraîche and mustard and add to the pan. Simmer uncovered for one minute. Season with salt and pepper. Sprinkle with cress.
