Chicken strips with pak choi

Ingredients for 4 servings:

  • 400 g chicken breast fillet(s)
  • 1 tbsp soy sauce
  • 2 tbsp oil, neutral
  • Ginger powder
  • Garlic granules
  • 100 ml sake
  • 3 tbsp mirin
  • 4 baby pak choi, approx. 300 g
  • 1 tbsp clarified butter
  • 200 g chanterelles
  • 50 g cashew nuts
  • 100 g cream

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Cut the chicken breast fillets into strips and marinate in the soy sauce. Heat the oil in a pan and sear the meat, seasoning with ginger and a little garlic. Once the meat has a nice color, deglaze with sake and allow to reduce completely. Then add the mirin and transfer everything to a bowl. Remove the tough stalks from the pak choi and trim them, then sauté them in a little clarified butter over medium heat. Thinly slice the chanterelle mushrooms and add them. Roughly chop the cashews and return them to the pan with the meat. Finish with cream and season with salt. Tastes especially good with tagliatelle. If you don’t have mirin, you can use Noilly Prat instead; sake can be substituted with white wine.
