Chicken thighs with mashed potatoes and fried onions à la Didi

Ingredients for 2 servings:

  • 2 chicken legs
  • 1 tbsp chicken seasoning
  • 700 g potatoes
  • 125 ml milk
  • 50 g butter
  • 1 tsp white pepper
  • 2 tsp salt
  • 1 pinch of nutmeg
  • 2 servings of roasted onions à la Didi, see my recipes
  • 2 servings of pepper sauce (pepper and roasted onion sauce à la Didi), see my recipes

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

Rub the chicken thighs with the chicken seasoning, place them in a baking dish, and bake in the oven at 180°C (convection oven) for about 60 minutes. Meanwhile, peel the potatoes, roughly dice them, and boil them in well-salted water for 20 minutes. Meanwhile, prepare the fried onions and the sauce. Drain the potatoes and mash them with milk and butter or press them through a potato ricer. Season the mash with pepper, salt, and nutmeg. Briefly puree the mashed potatoes and mix well. Serve the chicken thighs with the mashed potatoes, fried onions, and sauce.
