Crispy grilled chicken wings with a fiery accent
Ingredients for 4 persons
For the chicken wings
- 1 kg chicken wings
- 3 tbsp olive oil
- 3 tbsp soy sauce
- 2 tbsp tomato passata
- 2 tbsp honey
- 1 tbsp mustard, medium hot
- 1 tbsp smoked paprika
- 2 tsp sea salt
- black pepper, freshly ground
For the tomato jam:
- 1.5 kg ripe tomatoes, diced
- 1 red bell pepper, diced
- 2 shallots, chopped
- 1 fresh chili, deseeded
- 2 garlic cloves, chopped
- 100g sundried tomatoes, finely chopped
- 2 tbsp brown sugar
- 2 tablespoons sherry or herb vinegar
- 200g Genovese pesto
- salt, cayenne pepper
For the chicken wings
Chicken wings:
- Mix olive oil, soy sauce, tomato passata, honey, mustard, paprika, salt, and pepper to form a marinade. Rub the wings well with the marinade and leave covered for approx. 2-3 hours in the fridge.
- Then grill it indirectly at approx. 200 degrees for approx. 30 minutes until crispy and enjoy with the fiery tomato jam.
Tomato jam
- Put the vegetables, sugar, and vinegar in a flat saucepan, bring to a boil and reduce for approx. 15 minutes while stirring. Puree with a blender and pass through a hair sieve.
- Mix with Pesto Genovese and season with salt and cayenne pepper.
