Ingredients for 4 servings:

  • 1 chicken
  • 4 large onions
  • 500 ml beer
  • salt and pepper
  • Fat

Chicken in beer sauce (from La Mancha)

Cut the chicken into manageable pieces or use individual chicken parts, such as thighs, drumsticks, or breasts. Brown them thoroughly, season with salt and pepper, and keep warm. Peel the onions, cut them into wedges, and sauté them in a little fat in the chicken roasting pan until translucent. The onions can brown slightly. Pour in the beer (bitter beers are not suitable), add the chicken pieces, and finish cooking. Reduce the beer and onion sauce. Season with salt and pepper, and serve. Rosemary potatoes make a good side dish.
