Chicken with lemon and onion sauce

Ingredients for 4 servings:

  • 8 chicken legs
  • 4 lemons
  • 2 chili peppers, red
  • ½ tsp black pepper
  • ½ tsp salt
  • 3 cloves garlic
  • 4 onions
  • 1 cup(s) oil (peanut oil)
  • 300 g potatoes (sweet potatoes), cut into small cubes
  • 300 ml chicken stock
  • 100 ml oil, peanut oil for frying

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Yassa Chicken

Squeeze the lemons and place them in a bowl. Cut open the chilies, deseed them, and cut them into pieces, then add them to the juice. Season with pepper and salt. Peel and press the garlic, then add them to the mixture. Clean and peel the onions, slice them into fine rings, and add them. Add the cup of peanut oil and mix everything together to form a marinade. Now toss the chicken drumsticks with the marinade in a bowl and let them stand for 60 minutes, then remove and drain. Heat the peanut oil in a large pan and fry the drumsticks until crispy and brown all over. Remove and keep warm. Then fry the sweet potatoes in the hot oil until crispy. Add the meat back in, top up with the marinade and onions. Add the chicken stock and simmer, covered, over low heat for about 20 minutes. Serve with rice as a side dish.
