Chicken with tomato sauce

Ingredients for 4 servings:

  • 1 chicken, approx. 1.2 kg
  • 2 tbsp olive oil
  • 1 liter tomato(s), pureed
  • 3 garlic cloves
  • 3 tbsp oregano, shredded
  • 2 tbsp sugar
  • salt and pepper
  • Paprika powder, sweet
  • 3 bay leaves

Instructions

Working time approx. 20 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

Clean the chicken and divide it into 4 pieces. Mix the tomatoes with 100 ml of water. Stir in the oregano and sugar. Season with salt and pepper. Peel the garlic cloves, halve them, press them lightly, and add them to the tomato sauce with the bay leaves. Pour the sauce into a baking dish. Rub the chicken pieces with oil and season with salt, pepper, and paprika. Place the chicken pieces in the tomato sauce. Cook in a preheated oven at 180°C for about 1 hour. Turn off the oven and let stand for about 10 minutes. Serve with a ciabatta for the sauce.
