Ingredients for 4 servings:
- 500 g chicken breast fillet(s)
- 1 clove(s) garlic
- 1 tsp sambal oelek
- 10 tbsp soy sauce
- 3 tbsp oil
- 3 carrots
- 2 bell peppers, red
- 1 head of broccoli
- 3 spring onions
- 6 tbsp peanut butter, creamy
Instructions

First, marinate the meat and let it sit for about an hour. Peel and finely chop the garlic. Mix it with 1/4 teaspoon of sambal oelek, 2 tablespoons of soy sauce, and 1 tablespoon of oil. Cut the meat into small pieces and toss it with the marinade. In the meantime, cut the broccoli into small florets and cook in boiling salted water for about 3 minutes. It should still be slightly firm to the bite. Cut the bell peppers into small pieces, peel the carrots, and also chop them. The carrots shouldn’t be too thick, otherwise they won’t cook. Cut the spring onions into small rings. Then fry the meat until it is cooked through. Then remove the meat from the pan and fry the vegetables until everything is cooked through but still has a bit of bite. Finally, add the broccoli briefly and fry for 2 minutes. Remove the vegetables from the pan and stir-fry the remaining ingredients into a sauce in the pan. Add 8 tablespoons of soy sauce, the remaining sambal oelek, peanut butter, and just under 0.5 liters of water. Bring to a boil until the sauce thickens. Add the meat and vegetables and cook for another two minutes. Serve with rice, if desired.
