Chickpea patties

Ingredients for 1 servings:

  • 200 g chickpeas
  • 1 onion(s)
  • 2 tbsp olive oil
  • 2 large eggs
  • 150 g quark (20%)
  • 3 tbsp olive oil
  • 100 g breadcrumbs (wholemeal)
  • 4 tbsp parsley, chopped
  • 1 tbsp rosemary, chopped
  • 2 garlic cloves, chopped
  • Salt
  • Pepper from the mill
  • n. B. Olive oil for brushing

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Soak the chickpeas in plenty of cold water overnight or use canned chickpeas (no soaking necessary in this case). Peel and finely chop the onion, and roast it in 2 tablespoons of hot olive oil for about 5 minutes, then let it cool. Strain the chickpeas and drain well. Puree them in a food processor with the beaten eggs, curd cheese, and 3 tablespoons of olive oil. Stir in the breadcrumbs and season with parsley, rosemary, garlic, salt, and pepper. Let it rest for 15 minutes. Form the mixture into 8 patties. Brush with olive oil and grill in an aluminum tray on a hot grill or fry in olive oil in a hot pan. Tip: The mixture (without the egg and with fewer breadcrumbs) also tastes great as a dip or spread!
