Chickpeas in tomato sauce

Ingredients for 2 servings:

  • 1 can chickpeas, 480 g drained weight
  • 2 cloves garlic
  • 1 ½ tbsp peanut butter
  • 1 tsp paprika powder, hot
  • 1 tsp curry powder
  • 1 tsp herbs, Italian
  • 1 vegetable onion(s)
  • 1 tbsp chili sauce
  • ½ tsp caraway powder
  • ½ tsp cinnamon
  • salt and pepper
  • olive oil
  • 400 tomatoes, pureed

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

vegan and simple

Peel and chop the onion. Crush the garlic in a garlic press. Sauté the onions in heated olive oil. Add the chickpeas and sauté briefly. Add the peanut butter, tomatoes, spices, and garlic, and bring to a boil. Season with salt, pepper, and chili sauce. Simmer for about 30 minutes to allow the spices to infuse.
