Chicory soup

Ingredients for 4 servings:

  • 500 g chicory
  • 75 g bacon, streaky
  • 30 g margarine
  • 2 onions
  • 30 g flour
  • 1 liter meat broth
  • Salt and nutmeg
  • 1 egg yolk
  • 1 tbsp sour cream
  • Parsley, chopped

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Clean the chicory and cut into strips. Dice the bacon and fry in hot margarine. Add the diced onions and chicory to the hot fat. Sauté lightly, but do not brown. Sprinkle with flour, mix well, and sweat thoroughly. Pour in the meat broth. Cook for 7 minutes. Season with salt and nutmeg. Remove the pan from the heat. Whisk the egg yolk with the sour cream. Add to the hot soup. Do not boil. Sprinkle with chopped parsley.
