crispy cheese crackers – ideal for parties, makes about 80 pieces

Mix all dry ingredients in a large bowl. Add butter and knead into a crumbly mixture. Grate the cheese, add it with the beaten egg, and knead the mixture into a dough. Form a ball, wrap it in cling film, and chill in the refrigerator for 30 minutes. Preheat oven to 210°C and line baking sheets with baking paper or grease. Roll out the dough on a lightly floured surface to a thickness of 3 mm and cut out shapes using a cookie cutter (approx. 6 cm). Place on the baking sheets, leaving enough space between each cookie, and bake for 10-15 minutes until golden brown. This makes enough for about 80 cookies.
