Ingredients for 4 servings:
- 1 onion(s)
- 2 garlic cloves
- 2 bell peppers, red and green
- 2 stalk(s) Celery
- 400 g pumpkin flesh, e.g. Hokkaido
- 400 g minced beef
- 2 tbsp oil
- 400 g tomatoes, chopped
- 2 tbsp tomato paste
- 250 ml vegetable stock
- some spice mix for chili con carne
- Cayenne pepper
- 2 tbsp spice paste (harissa)
- Sugar
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Peel the onion and garlic, finely dice the onion, and chop the garlic. Halve the bell pepper and squash, trim the celery, dice the bell pepper and slice the celery, and cut the squash into small balls. Brown the ground beef in heated oil, add the vegetables, and roast. Pour in the tomatoes, tomato paste, and broth, and simmer for about 15-20 minutes. Season the chili with spices and sugar. Serve with tortilla chips.
