Ingredients for 4 servings:
- 450 g tofu, crumbled
- ½ tsp garlic powder
- 1 pinch of chili powder
- ½ tsp salt
- 2 tbsp oil
- 1 onion(s), chopped
- 1 clove(s) garlic, chopped
- 4 tomatoes, peeled and chopped
- 1 pepper(s), diced, green
- 1 can of corn
- 1 can kidney beans
- 300 ml sauce (tomato sauce)
- 300 ml vegetable stock
- 2 tsp salt
- 1 tbsp tomato paste
- 1 pinch(s) of pepper
- chili powder
- 1 tsp cumin
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
In a bowl, combine the tofu with the garlic powder, chili powder, and salt. Sauté the chopped onion and garlic clove with the tomatoes and bell pepper in vegetable oil. Add the tofu mixture and fry. Then set aside. Combine the sauce ingredients in a saucepan and bring to a boil over medium heat. Add the tofu mixture, beans, and corn, and simmer briefly.
