Chinese cabbage salad with mandarins

Ingredients for 4 servings:

  • 1 small Chinese cabbage
  • 3 mandarin oranges, fresh
  • 100 g crème fraîche or sour cream
  • 3 tbsp milk
  • 1 tsp honey or sugar, to taste
  • ½ lemon(s), the juice
  • 1 tbsp soy sauce, light
  • salt and pepper
  • 1 pinch(s) curry, to taste
  • Walnuts, as desired

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Remove the outer leaves from the Chinese cabbage. Remove the remaining leaves, wash them, spin them dry, and cut them into fine strips. Peel the mandarin oranges and cut the individual segments into pieces, cutting them in half if necessary. Combine the ingredients in a salad bowl. Mix the remaining ingredients into a dressing, season to taste, and gently toss them into the salad. Garnish with walnuts, if desired. Note: When fresh mandarin oranges are unavailable, the salad also tastes great with canned fruit.
