Cut the chicken cutlets into small pieces, season, and fry in oil. Finely chop the onion, bell pepper, and mushrooms and add them. Sauté for a while, then adjust the seasoning to taste. Deglaze with the soy sauce, add the bamboo shoots and mung bean sprouts. Stir the sauce thickener into a cup of water until the liquid is lump-free, then slowly stir it into the stir-fry. Simmer for 5-10 minutes. Rice goes very well with this dish, of course.
