Chinese chicken with cashew nuts

Ingredients for 4 servings:

  • 4 chicken breasts, cut into strips
  • 3 garlic cloves, pressed
  • 4 tbsp soy sauce
  • 2 tbsp flour
  • 250 g Chinese egg noodles
  • 4 tbsp oil (sesame oil)
  • 120 g cashew nuts, roasted, unsalted
  • 6 spring onions, finely chopped
  • Chili pepper(s) as desired

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Marinate the chicken with garlic and soy sauce, coat in flour, and let stand for at least 30 minutes. Meanwhile, cook the noodles according to the package instructions. Heat the oil in a wok, add the meat with the marinade, and roast for about 5 minutes until golden brown. Add the cashews and spring onions and roast for another 3 minutes. Add the noodles and fry for another 2 minutes. Serve immediately. Sprinkle with finely chopped chili pepper, if desired. Tip: If you don’t have unsalted cashews, simply use salted ones, rinse them, and dry them. Since we like spicy food, I always add a chopped chili pepper to the noodles.
