Ingredients for 1 servings:

  • 125 g margarine (diet margarine)
  • 1 pinch of salt
  • 100 g sweetener (diabetic sweetness)
  • ½ tsp sweetener, liquid
  • 1 egg(s)
  • 100 g flour (type 405)
  • 100 g flour (fine whole wheat flour)
  • 1 tsp baking powder
  • 75 g desiccated coconut
  • 125 g chocolate for diabetics
  • 10 g coconut oil

Place soft margarine, salt, diabetic sweetener, and liquid sweetener in a mixing bowl and beat until creamy using the whisk attachment of a hand mixer. Stir in the egg. Mix both flours, baking powder, and desiccated coconut. Add tablespoon by tablespoon to the fat and sugar mixture and stir in. Halve the dough and divide each half into 24 portions. With moistened hands, form small balls and flatten with a wide-toothed fork lightly dipped in flour. Place on two baking sheets lined with baking paper and bake in a preheated oven (electric oven: 175°C/fan 150°C) (gas mark 2) for about 15 minutes. Remove from the oven and let cool on a wire rack. Roughly chop the chocolate and place it in a small bowl with the coconut oil. Melt over a pan of warm water, stirring continuously. Dip each bear paw one-third into the melted chocolate. Drain on a wire rack and let dry completely.
