Chocolate cake and yogurt ice cream on orange mirror

Ingredients for 5 servings:

  • 200 g sugar
  • 6 eggs
  • 150 g butter
  • 250 g chocolate
  • 50 g flour
  • Butter and flour for the mold
  • 700 g natural yogurt
  • 100 g powdered sugar
  • 130 g cream
  • some lemon juice
  • 50 g sugar
  • 200 ml orange juice, freshly squeezed
  • 1 tbsp butter, cold
  • 50 ml orange liqueur
  • 4 oranges

Instructions

Working time approx. 1 hour 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 20 minutes; Total time approx. 2 hours 50 minutes

Separate the eggs and beat the egg whites until stiff, then set aside. Beat the sugar, egg yolks, and butter until creamy, melt the chocolate in a double boiler and add to the pan. Finally, mix in the flour until creamy. Fold in the stiffly beaten egg whites. Pour the cake batter into a buttered and floured dish and bake in the oven at 200°C (top/bottom heat) for 15 minutes. For the ice cream, mix all the ingredients together and pour into an ice cream maker. For the orange glaze, add the sugar and a few drops of water to a hot pan and caramelize. Once the sugar has melted, deglaze with orange juice and reduce by half. Next, deglaze with orange liqueur and cook for 5 minutes. Remove the butter from the refrigerator and add it. Do not let it boil any longer; just swirl the pan. Set aside and fillet the four oranges, then add to the sauce before serving.
