Chocolate cake with a liquid center, grilled peach and vanilla ice cream

Ingredients for 5 servings:

  • 5 scoops of vanilla ice cream
  • 210 g butter
  • 210 g chocolate, dark
  • 7 eggs
  • 270 g sugar
  • 120 g flour
  • 40 g cocoa powder, unsweetened
  • 300 ml orange juice
  • 1 tsp brown sugar
  • 1 lemon(s), juice
  • 5 peach(s), fresh or from the can
  • 100 g amaretti biscuits
  • Fat for the molds
  • Powdered sugar for dusting

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 20 minutes

Wash the peaches, halve them, and carefully remove the stones. Roughly crush the amaretti biscuits in a mortar and pestle. For the reduction, place the brown sugar in a saucepan and let it caramelize. Then deglaze with the orange and lemon juice. Reduce everything to a syrupy consistency and then let it cool. Add the crushed amaretti biscuits to the reduction. Preheat the oven to 185°C (top/bottom heat). Melt the chocolate and butter together in a bain-marie. Meanwhile, beat the eggs and sugar with a food processor until the mixture is white. Mix and sift the flour and cocoa. Carefully stir the chocolate-butter mixture into the egg-sugar mixture. Then fold in the flour mixture. Pour the mixture into 5 greased baking cups as quickly as possible. Place the cups in the oven and bake the cakes for 7-9 minutes. Grill the halved peaches cut-side down for 3-5 minutes, then brush with the reduction. Serve the grilled peaches with vanilla ice cream and the cakes, dust with powdered sugar, and serve.
