Ingredients for 4 servings:

  • 2 tbsp raisins
  • 1 orange(s), 2 tbsp juice or rum 54%
  • 60 g corn, ground OR
  • 80 g grain, other, ground
  • 1 pinch of salt
  • 300 ml water
  • 50 g almonds
  • 8 tbsp milk
  • 3 tbsp honey
  • 4 tsp cocoa powder, slightly defatted
  • ¼ tsp ground cinnamon
  • ½ tsp vanilla powder (bourbon)
  • 200 ml sweet cream

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Roughly chop the raisins and let them steep, covered with orange juice. Meanwhile, combine the flour and salt with the water and cook over medium heat until a thick paste forms. Remove from heat. Chop the almonds into medium-sized pieces. Stir the honey, almonds, milk, cocoa, spices, and raisins into the flour paste. Chill the cream thoroughly. Whip the cream until stiff peaks form and fold into the cream.
