Chocolate gingerbread

Ingredients for 1 servings:

  • 6 eggs
  • 100 g butter, soft
  • 200 g sugar
  • 600 g hazelnuts, ground
  • 200 g chocolate, grated
  • 4 drops of bitter almond flavor
  • 2 cl eggnog
  • 2 cl rum
  • 2 tsp, leveled baking powder
  • 3 tbsp flour
  • 15 g gingerbread spice
  • Wafers, large, round
  • Chocolate coating, I use whole milk

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

The world’s best chocolate gingerbread, quick and easy

Cream the butter and sugar until fluffy and stir in the eggs. Stir in the hazelnuts, chocolate, bitter almond oil, egg liqueur, and rum. Combine the baking powder, flour, and gingerbread spice and mix into the dough. If the dough is too soft, you can firm it up a bit by adding ground nuts. Spread the mixture onto wafers and bake at 175°C for 15-20 minutes. Once cooled, coat the gingerbread thickly with chocolate coating.
