Chocolate-mint cookies

Ingredients for 1 servings:

  • 250 g wheat flour
  • ½ tsp baking powder
  • 20 g cocoa powder
  • 120 g sugar
  • 1 packet of vanilla sugar
  • 2 tea bags (peppermint tea)
  • 1 egg(s)
  • 70 g jam (orange)
  • 200 g butter or margarine, soft
  • 100 g dark chocolate coating
  • some palm fat
  • ½ packet of sugar (orange sugar)

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 15 minutes

One of my two favorite cookie recipes of 2013, makes about 30 cookies, depending on size

For the dough, combine the flour, baking powder, and cocoa powder and sift into a mixing bowl. Add the sugar, vanilla sugar, the contents of the peppermint tea bags, the egg, jam, and butter or margarine. Mix the ingredients until a smooth dough forms. Place small mounds on a baking tray lined with baking paper. Be careful not to place them too close together, as they could spread during baking and easily stick together. Place the baking trays one after the other in an oven preheated to 180°C (top/bottom heat, fan: 160°C, gas mark 2-3) for about 10-15 minutes each. After baking, let the cookies cool on the baking paper. In the meantime, heat the dark chocolate coating, add a little palm oil and the orange sugar, and mix everything well. Place this icing in a piping bag fitted with a thin nozzle and sprinkle over the cooled cookies. Then let everything dry thoroughly.
