Ingredients for 1 servings:

  • 60 g mint (chocolate mint)
  • 800 ml water
  • 500 g gelling sugar 2:1
  • 1 vanilla pod(s), including the pulp

Instructions

Working time approx. 1 hour; Rest time approx. 1 hour; Cooking/baking time approx. 10 minutes; Total time approx. 2 hours 10 minutes

Steep the cleaned chocolate mint with the water in a large pot for half an hour, then bring everything to a boil and let it steep for another half hour. Strain the tea through a cheesecloth; you should get 750 ml of liquid (top up with more water if necessary). Now mix the tea with the gelling sugar and vanilla bean pulp and boil for about 3-4 minutes according to the package instructions. Test for set and pour into prepared jars.
