Chocolate Mousse with Strawberry Fruit Sauce

Ingredients
 

  • 250 g Dark couverture chocolate
  • 70 g Sugar
  • 100 ml Warm milk
  • 2 piece Eggs
  • 250 ml Cream
  • 1 shot Rum
  • 200 g Frozen or fresh strawberries
  • 3 packet Vanilla sugar

Instructions
 

  • Melt the couverture in a water bath
  • Whip the cream until stiff
  • Separate the egg white from the egg yolk. Beat the egg whites with 60 grams of sugar until stiff.
  • Add warm milk to the couverture and stir.
  • Beat the egg yolks with 10 grams of sugar over a water bath until frothy, stirring constantly, and mix with the couverture.
  • Add a shot of rum to the chocolate mass and stir the mass in a cold water bath until it has cooled down
  • Fold in the whipped cream and egg whites.
  • Pour the mixture into glasses and chill for about 2 hours
  • Puree the strawberries with the vanilla sugar and add to the mousse. Decorate with lady fingers.
