Ingredients
- 250 g Dark couverture chocolate
- 70 g Sugar
- 100 ml Warm milk
- 2 piece Eggs
- 250 ml Cream
- 1 shot Rum
- 200 g Frozen or fresh strawberries
- 3 packet Vanilla sugar
Instructions
- Melt the couverture in a water bath
- Whip the cream until stiff
- Separate the egg white from the egg yolk. Beat the egg whites with 60 grams of sugar until stiff.
- Add warm milk to the couverture and stir.
- Beat the egg yolks with 10 grams of sugar over a water bath until frothy, stirring constantly, and mix with the couverture.
- Add a shot of rum to the chocolate mass and stir the mass in a cold water bath until it has cooled down
- Fold in the whipped cream and egg whites.
- Pour the mixture into glasses and chill for about 2 hours
- Puree the strawberries with the vanilla sugar and add to the mousse. Decorate with lady fingers.
