White Mousse with Strawberry Sauce

The perfect white mousse with strawberry sauce recipe with a picture and simple step-by-step instructions.

  • 300 g White couverture
  • 2 piece Eggs
  • 4 tbsp Rum
  • 500 ml Cream
  • 600 gram Strawberries
  1. For the mousse, first melt the couverture in a water bath. Beat the eggs and rum in a water bath and stir the couverture into the egg mixture. Whip the cream until stiff, add the couverture mixture, mix well and refrigerate until it has set (preferably overnight or at least 5 hours). Puree the strawberries and strain them through a sieve. Pour the puree onto the firm mousse as a sauce.
