Chocolate muffins with cream cheese filling

Ingredients for 12 servings:

  • 150 g double cream cheese
  • 2 packets of vanilla sugar
  • 1 egg(s)
  • 160 g sugar, brown
  • 100 ml oil (sunflower oil)
  • 320 ml buttermilk
  • 210 g flour
  • 2 tsp baking powder
  • 4 tbsp cocoa powder
  • ½ tsp baking soda
  • 200 g cake icing, chocolate
  • 3 tbsp chocolate decoration (milk chocolate sprinkles)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Mix the cream cheese with the vanilla sugar. In a second bowl, whisk the egg, then stir in the sugar, oil, and buttermilk. Sift the flour with the baking powder, baking soda, and cocoa powder and fold in. Preheat oven to 180 degrees Celsius. Grease the muffin tins. Fill the holes with 1/4 of the batter and top each with 1 teaspoon of cream cheese frosting. Cover with the remaining batter. Bake the muffins for 20-25 minutes. Let cool, then remove from the tin. Melt the glaze in a hot water bath. Dip the muffins in the batter and place them on a wire rack. Sprinkle with sprinkles and let dry.
