Ingredients for 1 servings:
- 250 g flour
- 250 g sugar
- 2 tsp cinnamon
- 2 tsp baking soda
- 1 pinch of salt
- 150 ml oil, neutral
- 4 eggs
- 300 g carrot(s), grated
- 75 g walnuts, chopped
- 80 g butter, soft
- 200 g cream cheese
- 200 g powdered sugar
- 1 ½ tsp butter-vanilla flavoring
- Walnuts, halved, or marzipan carrots for decoration
- Fat for the mold
Instructions
Working time approx. 40 minutes; Total time approx. 40 minutes
Combine the first five dry ingredients in a bowl and mix. Add the oil. Beat in the eggs one at a time. Mix in the grated carrots and chopped walnuts. Pour the batter into a greased cake pan of your choice. Bake in a preheated oven at 180°C for approximately 40-45 minutes (test with a toothpick). Then, combine 200g cream cheese, 200g powdered sugar, 1 1/2 teaspoons vanilla extract, and 80g butter in a bowl and beat with a mixer until creamy. Spread over the cooled cake. Decorate with walnut halves or small carrots (preferably marzipan).
