Chocolate-Orange Cookies

Ingredients for 1 servings:

  • 175 g flour
  • 75 g cornstarch
  • 1 tsp baking powder
  • 1 egg(s), size L
  • 1 pinch of salt
  • 1 orange(s), grated peel
  • 125 g powdered sugar
  • 125 g butter
  • 100 g chocolate, grated, dark
  • 50 g jam, orange
  • 1 cl Cointreau

Mix the flour, cornstarch, and baking powder, sift onto a work surface, and then add the egg, salt, orange zest, and powdered sugar to a well in the center, then spread the diced butter around the edge. Knead until smooth. Knead in the chocolate. Wrap the dough in cling film and chill for about 2 hours. Roll out the dough on a floured surface to a thickness of about 3 mm and cut out equal amounts of 3 and 4 cm squares. Place the squares on greased baking sheets, bake in a preheated oven at 150-180 degrees Celsius (300-350 degrees Fahrenheit), depending on the type of oven, for about 8-10 minutes, and then cool on a wire rack. Mix the jam with the Cointreau, spread a little jam on the bottom of the small squares, place them in the center of the larger squares, and press down lightly. Finally, dust the cookies with powdered sugar.
