Potato noodle – minced meat casserole

Ingredients for 4 servings:

  • 500 g potato(s) pasta (ready-made product)
  • 1 onion(s)
  • 1 stalk(s) leek
  • 1 zucchini
  • 250 g cherry tomatoes
  • 2 tbsp vegetable oil
  • 400 g minced meat (beef or half and half)
  • 1 pack of tomato(s), pureed, approx. 400g
  • 150 g cheese, grated
  • Salt
  • Cayenne pepper

Preheat the oven to 180 degrees Celsius. Peel and dice the onions. Clean and wash the leeks, and slice them into half rings. Wash and halve the zucchini and tomatoes, and slice the zucchini as well. Heat oil in a pan and fry the diced onions. Add the minced meat and fry until well browned. Add the leeks and zucchini and sauté. Pour in the passata, stir in the cherry tomatoes, and season with salt and cayenne pepper. Place the potato noodles in single-serve casserole dishes and pour the sauce over them. Sprinkle the casseroles with cheese and bake in the preheated oven for 10-20 minutes.
