Ingredients for 6 servings:
- 1 leg of beef
- 1 tbsp oil
- 1 kg beans (stalks)
- 3 m.-large carrot(s)
- 3 m.-sized potatoes
- 1 onion(s)
- a few stalks of celery greens
- 6 Mettwurst
- 1 small pepper
- 2 tomatoes
- 1 tbsp savory
- 1 stalk(s) leek
- 1 ½ liters of water

Runner bean soup Lower Rhine style
Wash the leg of beef, pat dry, and sear in oil on both sides. Pour in water and simmer for one hour. Clean and chop the vegetables, trim the ends of the green beans, and cut the beans into approximately 1 cm long pieces. Peel and deseed the tomatoes. Pierce the sausages. Deseed the peppers and chop very finely. Cook all ingredients in the broth for about 45 minutes and season with pepper, salt, and savory before serving.
