Ingredients for 2 servings:
- 2 sheets of puff pastry (frozen)
- 2 apples, peeled, pitted, sliced
- 1 ½ lemon(s)
- 75 g ground almonds
- 100 g sugar
- 1 bag of vanilla sugar
- 2 gingerbread cookies
- Cinnamon powder
- Sugar for sprinkling
- e.g. raisins
- possibly gingerbread spice
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
Apple strudel with a twist
Remove the puff pastry sheets from the freezer and let them thaw. During this time, prepare the apples and juice the lemons. Place the apples in a bowl and mix with the lemon juice. Add the sugar, vanilla sugar, and cinnamon and mix again. Now stir in the ground almonds. Remove the glaze from the gingerbread cookies if desired (although this is not necessary), chop them finely, and mix them in as well. Season to taste with sugar and cinnamon, if desired, and add a pinch of gingerbread spice if desired. Place the filling on one sheet of pastry. Place the second sheet on top and press the edges together. Sprinkle the top sheet with a little sugar (and cinnamon if desired). Bake at 180–200°C (fan oven) for about 15–20 minutes.
