Ingredients for 8 servings:

  • 6 eggs, the egg whites
  • 150 g powdered sugar
  • 1 pinch of salt
  • 100 g almonds or nuts, finely grated
  • 30 g lemon peel or aranzini, finely chopped
  • 40 g chocolate, grated
  • 50 g flour (wheat flour)
  • 50 g butter, liquid

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Egg white – utilization

Beat the 6 egg whites with half the sugar and a pinch of salt until stiff, forming a thick, glossy peak. Mix the nuts or almonds, candied lemon or arancini, grated chocolate, flour, and the remaining sugar thoroughly and stir into the peaks with a wooden spoon. Finally, gently stir in the lukewarm melted butter. Pour the mixture into a buttered and floured, rectangular, high-sided pan, 4-5 cm thick, and bake at 125-150°C (250-300°F) on the middle shelf for 50-55 minutes. Cut into neat slices the next day.
