Ingredients for 1 servings:

  • 500 g sugar
  • ½ liter cream
  • 1 tbsp gingerbread spice
  • 40 g butter

A popular souvenir during Advent

Bring the cream, sugar, and gingerbread spice to a boil in a large, tall saucepan (careful! The mixture will rise quite high). Bring to a boil, stirring constantly, and reduce until a sugar thermometer registers 114°C. Remove the pan from the heat and stir in the butter. Spread the mixture 1 cm thick on a baking sheet lined with baking paper. Let cool slightly and cut into 2 x 2 cm squares. Note: I recommend using a sugar thermometer. Without one, you’ll need to reduce the cream, sugar, and gingerbread spice until the mixture begins to separate from the bottom of the pan.
