Ingredients for 8 servings:
- 1 head of red cabbage (approx. 1.6 kg)
- 8 apricot(s), dried
- 1 m.-sized onion(s)
- 3 m.-sized apples (Boskoop)
- 2 packs of mulled wine spice powder, for 1/4 l of liquid each
- ½ liter of water
- ⅛ liter Balsamic vinegar bianco
- 6 tbsp sugar
- 3 tbsp lard

Red cabbage with a twist
Finely grate the red cabbage, peel and dice the apples, peel and dice the onion very finely, and also dice the apricots very finely. Heat the water and dissolve the mulled wine spices in it. Add the diced apricots to the spiced broth and let them steep for a while. Melt the lard in a large saucepan and briefly sauté the diced apple and onion. Sprinkle over the sugar and stir in, then bring to a boil briefly. Gradually stir in the red cabbage and braise. Once all the red cabbage has been thoroughly mixed into the pot, deglaze with the vinegar, then add the broth with the apricot pieces and bring to a boil briefly. Cover and simmer on low heat for about 60-90 minutes (depending on consistency and taste). Season to taste with more vinegar and sugar, if desired.
