Christmas turkey with dried fruit and cinnamon

Ingredients for 4 servings:

  • 1 turkey
  • 200 g dried fruit
  • 120 g white bread or toast
  • 70 g clarified butter
  • 100 ml milk
  • 1 tsp cinnamon powder
  • 1 egg(s)
  • 3 carrots
  • 4 onions
  • 1 liter of broth
  • 1 tbsp sauce thickener
  • 100 g crème fraîche
  • salt and pepper

Working time approx. 35 minutes; Cooking/baking time approx. 2 hours; Total time approx. 2 hours 35 minutes

for many years my “always successful” turkey recipe for Christmas

Cover the dried fruit with water and bring to a boil briefly. Then drain and set aside. Season the turkey inside and out with salt and pepper. For the stuffing, dice the white bread and fry in clarified butter. Dice the dried fruit and mix with the bread. Pour boiling milk over it. Add the egg and knead well. Season with salt, pepper, and cinnamon. Then add the stuffing to the turkey. Place the roughly chopped onions and carrots around the turkey in a roasting tin with a lid. Add half of the stock. Roast in the oven at 200°C for 2 hours, basting occasionally and adding more stock if necessary. Remove the lid of the roasting tin 15 minutes before the end of the cooking time; this will make the turkey a little crispier. At the end of the cooking time, place the turkey on a large serving platter. Purée the stock with a hand blender and season with salt, pepper, and crème fraîche. Thicken with a sauce thickener if necessary. Red cabbage and potato dumplings go well with it.
