Ingredients for 6 servings:

  • ⅛ liter milk
  • 30 g yeast, fresh
  • 1 tsp sugar
  • 1 tbsp flour
  • 400 g flour
  • 60 g butter or margarine
  • 30 g sugar
  • 1 pinch of salt
  • 2 small eggs
  • 250 g potato(s), floury, cooked in skin
  • Cinnamon and sugar
  • Fat for frying

Instructions

Working time approx. 1 hour; Rest period approx. 1 day; Total time approx. 1 day 1 hour

Make a pre-dough from ingredients 1-4 and let it rise for about 1 hour. Peel the potatoes cooked the day before and press them through a potato ricer. Mix all ingredients into a smooth dough and form small noodles, thick in the middle and thinner towards the ends. Let these noodles rise for another 30-60 minutes and then fry in hot oil. Roll them in cinnamon sugar. The pastry tastes best the day it’s made.
