Cigar Packets in Sauce
The perfect cigar packets in sauce recipe with a picture and simple step-by-step instructions.
prepare in a bowl:
- Cold water
- 5 tbsp White wine vinegar
- 1 tbsp Flour
for the packet
- 2 kg Salsify fresh
- 2 Pck. Prosciutto – cooked ham
also:
- Grated zest of one lemon
- 3 tbsp Freshly squeezed lemon juice
- 2 Egg yolk
- 3 tbsp White wine dry
- 150 g Butter
- Salt pepper
- 1 pinch Sugar
- Peel the black roots and immediately place them in the prepared vinegar water
- Boil water with 2 tablespoons of lemon juice in a large saucepan, add black salsify and cook for 20 minutes
- Let the butter melt in a small saucepan.
- Now whip 1 tablespoon of lemon juice, egg yolk and white wine in a water bath and stir in the melted butter. Season with a little lemon juice, sugar, salt and pepper.
- Take the salsify out of the water with the help of tongs or the rope spoon. Wrap about 5 pieces with a piece of ham and place in a baking dish. Pour the sauce over them and bake in a preheated oven at 180 ° C for about 3 minutes
- Variant: If you like, you can add chopped parsley to the meal
- My TIP: put on gloves when peeling the salsify, because that’s a sticky matter … My knife and the peeler are still slightly sticky and brownish in color even after a hot wash …. The “drag” is worth it because the dish tastes just delicious. Both my husband and my mother want it to be repeated !!!
