Cinderella's lentil soup

Ingredients for 6 servings:

  • 2 bunch soup vegetables, cleaned and diced 1 x 1 cm
  • 300 gr. can/n lentils, rinsed
  • 500 g potatoes, washed, peeled and diced
  • 1 bay leaf
  • 1 tsp thyme, dried
  • 1 ¾ liters beef broth
  • 1 onion(s)
  • 100 g bacon, streaky
  • 1 tbsp clarified butter
  • 10 Vienna sausages
  • e.g. parsley

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

delicious lentil soup

Rinse the lentils. Bring to a boil in the beef broth along with the vegetables, potatoes, bay leaf, and thyme, and simmer for 30 minutes. Meanwhile, peel the onion and dice it, along with the bacon. Sauté both in clarified butter. Add the bacon mixture and sausages to the lentil soup. Cover and heat gently, but do not let it boil. Serve garnished with parsley, if desired.
