Cinnamon – Red Cabbage

Ingredients for 4 servings:

  • 600 g red cabbage, from the jar, drained
  • 1 onion(s)
  • 50 g goose fat
  • 2 apples (Boskoop)
  • 1 tbsp juniper berries
  • 2 cloves
  • 1 bay leaf
  • ½ stalk(s) cinnamon
  • 250 ml red wine
  • ½ lemon(s)
  • Salt
  • pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Finely chop the onion and sauté in a pan with goose fat until translucent, without browning. Peel, quarter, and core the apples, then divide each piece into smaller pieces. Add the apple pieces, sugar, and red cabbage to the onions. Add the lightly crushed juniper berries, cloves, bay leaf, cinnamon stick, the juice of half a lemon, and red wine. Simmer uncovered for half an hour. Season with salt and pepper to taste. Continue simmering uncovered for another quarter of an hour to reduce the liquid.
