Stir fry with pork fillet

Ingredients for 4 servings:

  • 500 g pork fillet(s)
  • 4 tbsp oyster sauce
  • Pepper, freshly ground
  • 1 small can/s of bamboo shoot(s)
  • 200 g fresh leaf spinach
  • 3 tbsp oil (sesame oil)
  • 1 tbsp yellow curry paste (more to taste)
  • 3 tsp sugar
  • 3 tbsp lime juice, freshly squeezed

Working time approx. 20 minutes; Total time approx. 20 minutes

Super quick to prepare and simply delicious Far Eastern

Cut the pork fillet into bite-sized pieces, toss with oyster sauce and pepper, and let it simmer for about 15 minutes. Wash the spinach, drain it, and remove any tough stems. Drain the bamboo shoots. Heat the oil in a wok and stir-fry the meat over high heat for about 2 minutes. Add the curry paste and mix well. Then add the bamboo shoots and spinach. Season with sugar and lime juice and sauté for about 2 more minutes, stirring. If it’s too dry, add a little more water. Serve with basmati rice or mie noodles.
