Cinnamon stars

Ingredients for 40 servings:

  • 3 egg whites
  • 250 g powdered sugar
  • 1 packet of vanilla sugar
  • 1 tsp cinnamon
  • 400 g almonds, ground, with shell

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 10 minutes

Traditional Christmas pastries

Beat the egg whites with a mixer until stiff peaks form. Gradually add the icing sugar. Take 2 heaped tablespoons of meringue mixture to coat the stars. Carefully fold the vanilla sugar, cinnamon, and half of the almonds into the remaining meringue mixture using a spatula. Knead in enough of the remaining almonds so that the dough is barely sticky. Cut open a large freezer bag, sprinkle with some ground almonds, and roll out the dough to about 1 cm thick. Cut out stars and place them on a baking sheet lined with baking paper. Cover with the remaining meringue. Place in the lower part of the oven at 140 degrees Celsius (top/bottom heat) for 25 minutes. Remove the cinnamon stars from the baking sheet using the baking paper and let them cool on a wire rack.
