Classic Chicken Fricassee
The perfect classic chicken fricassee recipe with a picture and simple step-by-step instructions.
- 250 g Cooked chicken
- 250 g Mushrooms
- 20 g Butter
- 250 g Asparagus
- 350 ml Chicken broth
- 130 g Peas
- 40 g Flour
- 30 ml White wine
- 100 ml Cream
- 6 g Salt
- 3 g Sugar
- 1 piece Egg yolk
- 5 ml Lemon juice
- Lightly fry the mushrooms in butter
- Dust with flour and make a sweat out of it
- Deglaze with the stock and wine. Chicken and asparagus with it
- Let simmer for 15 minutes. Add the peas, egg yolks and cream towards the end and season with salt, sugar and lemon juice
- Rice is eaten with it
